Azahar Coffee – more than a Decaf

Azahar Coffee – founded in 2010 – is a Colombian company with a clear mission: to source and curate high-quality microlots, often from remote regions. They work directly with smallholder farmers and build genuine partnerships, focusing on true direct trade. The goal: to secure stable, fair incomes for producers beyond the volatile commodity market – and to bring coffees that tell stories of origin, craft, and dedication.

In the “Rainbow Sugarcane Decaf” project, beans from seven producers across four communities in Huila – including regions like Acevedo and Pitalito – come together. It’s where tradition meets modern processing expertise – and you can taste that harmony in every cup.

The Sugar Cane Process (EA – Ethylacetat)

Decaffeination with Origin This coffee is decaffeinated using the Sugar Cane Process – a natural and particularly gentle method. Ethyl acetate, derived from sugarcane molasses, is used in the process. The big advantage: it all takes place directly in Colombia, close to the farms. No long transport routes, no loss of quality. The freshness is preserved, and so are the coffee’s origin and identity.

The beans are processed as Naturals: fermented for 40–220 hours, then carefully dried – first on raised beds, then in mechanical dryers. The result is maximum clarity and an exceptionally stable quality.
