Slow Bread Manifesto

"The great challenge of guaranteeing the right to food for a better life and a better future, as the FAO emphasizes on this World Food Day, begins for us with the way food is produced, processed and distributed - including bread.

There is food that harms, that is the result of a precise system in which waste, exploitation and hunger are necessary elements, the flip side of consumption and profit. And then there is food that is good for people and regions, that consists of history, culture, conviviality and enjoyment.

The aim of the Slow bread-The aim of the Manifesto is to bring together farmers, millers, bakers and pasta makers, but also chefs, technicians and institutions who recognize themselves in it and are working to engage an ever wider community of citizens. Especially in rural areas, traditionally grown grains produced with agroecological practices can be an important source of development." - Serena Milano, Director of Slow Food Italy.
